Cooking Time: 2 hours
Ingredients
1.5 kg flat rib (sawn into portions)
15 ml cooking oil
1 large onion (cut into rings)
2 cloves garlic (crushed)
30 ml chopped root ginger
20 ml medium curry powder
1 bay leaf
1 stick cinnamon
2 ml turmeric
500-750 ml hot beef stock
125 ml desiccated coconut
30 ml wine vinegar
1 green apple (cut into wedges)
2 bananas (peeled and sliced)
75 g sultanas
75 g dried apricots
10 ml salt
Method
Heat oil in potjie and brown meat.
Add onion and garlic and saute until golden brown and transparent.
Add ginger, curry powder, bay leaf, cinnamon and turmeric and saute for a few minutes.
Add hot stock and remaining ingredients.
Cover and allow to simmer for 1.5-2 hours or until meat is tender.
Serve with rice.
