Onion and Hake Potjie

Potjie No: 2
Serves: 4
Cooking Time: ½ hour


Ingredients
500 g hake, cut into portions
500 g onions, thinly sliced
60 g butter
5 ml salt
Freshly ground black pepper to taste
5 ml grated lemon rind
Juice of 1/2 lemon
125 g Cheddar cheese, cut into 10 mm cubes
60 ml dry white wine
15 ml chopped fresh mixed herbs or 5 ml dried
30 ml chopped fresh parsley

Method
Melt butter in potjie, add onions and sauté until soft and transparent.
Arrange fish on top of onions.
Season fish with salt and pepper.
Add lemon rind and juice.
Sprinkle cheese cubes over fish.
Pour heated wine into potjie and sprinkle mixed herbs over.
Cover potjie and cook gently over coals for 30 minutes. (Hot coals placed on top of the lid during cooking will ensure a nice brown top.)
Sprinkle with chopped parsley and serve.
