Potjie Smoorsnoek

Serves: 6
Cooking Time: 1 hour


Ingredients
1 kg salted (or smoked) snoek
60 ml cooking oil or 30 ml butter and 30 ml cooking oil
2-3 large onions, sliced
6 medium potatoes, thickly sliced
500 g tomatoes, skinned and coarsely chopped
1 small chilli, seeded and chopped
1 small bunch sorrel or 15 ml lemon juice

Method
Cover snoek with cold water.
Soak for a few hours or overnight depending on how salty the snoek is.
Discard the water and coarsely flake fish, discarding bones.
Heat oil or butter and oil in potjie, add onions and sauté until golden brown.
Remove onion and set aside.
Place potato slices on the bottom of the potjie.
Spoon onion on top and follow with flaked fish.
Spoon tomato and remaining ingredients over.
Cover with lid and simmer slowly for 30-45 minutes or until potatoes are tender and the fish is cooked.
Serve with rice.
